This “Crawfish Boil in a Bowl” Is More Meaty than Ever
TEXAS — For more than a year, Ramen Tatsu-ya fans have been waiting for The Crawmen’s return. A limited-time bowl brought back for the first time in five years in 2024, this Cajun-flavored ramen will be available starting Friday, April 4 through Wednesday, May 28, 2025!
Now with More Crawfish and Sausage
Described as a “crawfish boil in a bowl” by Corporate Chef Takuya “Tako” Matsumoto, The Crawmen starts with traditional Cajun spices combined into a “Bayou Butter,” plus plenty of crawfish tails, andouille sausage and a Southern succotash of corn and bell peppers. A lemon wheel rounds out this spicy ramen bowl carried by crawfish tonkotsu (pork bone broth), ajitama (marinated soft-boiled egg) and noodles. This year, the bowl packs a bigger punch with even more crawfish and sausage than before.
“We’re really leaning into Louisiana flavors,” notes Chef Tako. “Classic elements like andouille sausage, crawfish and maque choux lend to a rich, spicy and buttery ramen that’s full of Cajun flavor.”
Where to Find It
The Crawmen will be available daily from 11 a.m. to 10 p.m. from April 4 through May 28 at all Ramen Tatsu-ya shops, including six in the Austin area and one in Houston’s Montrose neighborhood. Add a flavor bomb to your bowl, pair with any of the restaurant’s sides or small bites, and sip between slurps with their ice-cold chillers, Maine Root sodas or slushies (with or without sake).
About Tatsu-ya
In fall 2012, Chef/Owner Tatsu Aikawa started Ramen Tatsu-ya with friends and family. After spending time at the Michelin-starred kaiseki/sushi bar Urasawa in Los Angeles, Tatsu returned to Austin to introduce authentic Japanese ramen to Texas. The shop quickly became a local sensation, boasting national accolades including Bon Appétit’s “Top 50 Best Restaurants.” Tatsu-ya currently has six Ramen Tatsu-ya locations in Austin and one in Houston with many more to come, including a second Houston location in Memorial City opening late 2025.
