SPICY CHILLED  MAKES ITS ANNUAL COMEBACK AT RAMEN TATSU-YA AS THE TEMPERATURE RISES

Chilled, Brothless Ramen and Kyuri Kup Beverage Pairing Return on Monday, May 20

TEXAS — On May 20, all six Texas locations of the nationally-acclaimed Ramen Tatsu-Ya will welcome back the restaurant’s signature warm-weather staple: Spicy Chilled. The beloved dish is a spicy and refreshing brothless ramen made with citrus soy dressing, ajitama, cucumber, tomatoes, pirikara ground pork, karashi mustard, chili oil and scallions. Kyuri Kup returns as the dish’s official beverage pairing, combining cucumber, simple syrup, yuzu and citrus over ice for a refreshing drink that helps tame the featured dish’s heat. Guests can choose to make the beverage boozy by adding sake. 

"We designed our Spicy Chilled Ramen to be a playful update on hiyashi chuka, a classic Sino-Japanese cold noodle dish. As with any Tatsu-Ya dish, we’re making it our own through elements like locally-sourced, in-season produce and a yuzu kosho kick in the traditional soy and vinegar-based hiyashi tare that coats the noodles,” says Chris Ostlund, VP of Culinary at Tatsu-Ya.

To get the taste buds working, the team uses ingredients such as pirikara ground pork and karashi mustard. Pirikara (which means "spicy" in Japanese) pork is flavored with toban djan, an acidic and complex fermented chili paste. Then, a swish of karashi mustard adorns the side of the bowl so guests can control the amount of wasabi-like punch they mix into their icy cold noodles. Toppings like English cucumbers, local tomatoes, scallions and iceberg lettuce bring a satisfying crunch and unmistakable brightness to the dish, while ajitama (marinated soft boiled egg) mellows things out.

“Spicy Chilled is a crushable dish that exemplifies that ramen isn’t just for cold weather,” says Tony Perez, Tatsu-Ya Brand Manager. He explains, “we pride ourselves in introducing diners to the diversity of variations in ramen dishes. In September, the restaurant brand will turn 12 years old, and it’s really neat to see that we have guests coming in seeking out featured dishes like this one year after year, while new guests are just making the happy discovery for the first time; no matter what, we’re continuing to spread the love for Japanese soul food, and that’s really special.”

Spicy Chilled Ramen and Kyuri Kups are a cool complement to the Texas heat. Spicy Chilled is priced at $14.00, while the Kyuri Kup is $5.00 without sake, or $6 with sake.
